Avocado toast

Ingredients:
1/2 - 1 Avocado
1 Egg
1 Slice of whole wheat bread (or whatever bread is your favorite!)
Lime juice to taste
Spice with garlic, chili powder, salt, & pepper to taste
Try with Trader Joe’s Everything Bagel Seasoning!
If you love elote like I do, try it with cotija cheese and tajin seasoning!
Instructions:
Start heating up a pan on medium-low heat. While that heats up, place your bread in your toaster, but wait to begin toasting.
Pit and hollow out the avocado and place in bowl. Combine seasonings and lime juice to taste by smashing down with a fork.
Crack egg into pan and cook in your preferred way and begin toasting your bread.
Smear avocado mixture onto toast, top with egg, and finish with salt and pepper.
What is better than a breakfast that is easy to make and healthy for you? Avocado toast is rich in monosaturated fats, fiber, and nutrients such as Vitamin K, Vitamin E, and B Vitamins. Plus, fun fact, protein in the morning leads to a sense of fullness and can help you avoid pesky energy crashes. This is one of my favorite ways to begin a morning and there are so many ways to make it your own. Have a favorite hot sauce? Cotija cheese and tajin? Everything bagel seasoning? Extra green scallions from last night’s dinner? Whatever you love, will likely work on this one!
Lime Juice:
I recommend getting bottled lime juice to simplify this even more. My favorite is Nellie’s and Joel’s Key West Lime Juice. A whole lime is typically too acidic for one serving, which leads to the other half potentially rotting away in my fridge, so having a bottle of lime juice in my fridge is more convenient.
Egg(s):
No matter how you like your eggs, my one tip is to make sure your pan is not too hot. Your pan should be at a medium to low heat, or about 1/3 of the way with the dial. If you cook your eggs with butter this is especially important to avoid a burnt butter taste.
Avocados:
If you only want to use half an avocado, that’s no sweat! What I like to do is rub some lime juice onto the opened half of the avocado, seal in plastic wrap, and pop it in the fridge. This will prevent the avocado from browning and stay fresh for around 3 days.
